In India, this is called a "Bhurji", the name given to anything mixed together.
Paneer is a good source of protein. If you are Vegan, use cashew creme instead.
Preparation: 15 minutes if you have the paneer ready
Alternative to paneer cheese: halloumi or panela cheese, or unsalted pressed ricotta cheese, for vegans: use cashew cream

Doshas: This recipes decreases Kapha (remove the cheese entirely to increase the weight loss effect or if you are vegan) and helps in a diet for weight loss. It might aggravate Pitta and is suitable for Vata in winter.
Ingredients
100g of firm tofu. Place the tofu in a sieve (colander). Cover with a paper napkin and place a heavy weight on top to drain out the excess water.
100g of Panner cheese, or halloumi cheese
For Vegans: 12 cashew nuts, soaked in ½ cup of water for 30 minutes, then blitzed into a smooth paste
1/2 medium red onion, minced
1/2 green bell pepper, minced
1 garlic clove
1 tsp fresh ginger, grated
1/2 cup tomato puree (125ml)
2 tsp coriander powder
1 tsp cumin powder
¼ tsp turmeric
1/2 tsp paprika
¼ cup chopped coriander leaves
2 tsp sunflower oil
Juice of ½ lemon
Salt to taste
Preparation
1. Heat the oil in a saucepan. Add the onions and the cheese (the vegan version will include the cashew nut paste a bit later) and sauté until they start to brown.
2. Add the garlic, ginger. Sauté for a minute, then add the green peppers, coriander powder, cumin powder, turmeric and paprika. Stir to mix. And leave to cook till the cheese is golden.
3. Add the tomato puree.
4. Cook, stirring frequently, until the tomato puree is thick and a few shades darker.
5. Crumble the tofu and add it to the saucepan. Stir well to mix,
6. Cook the mixture on medium heat for about five minutes, stirring frequently.
7. For vegans: it’s time to add the cashew cream and salt to taste.
8. Salt to taste and Stir in the coriander leaves and lemon juice. Serve hot with a flat bread (tortilla, roti, pitta)
